Gammon Joint

This joint is produced from the back leg of the pig.  We cure this muscle on the bone for 2 weeks before deboning and drying the joint by hanging in the fridge.  Our process is very simple and the finished product is no heavier than when we started.  We do not pump the leg with a brine mixture (salt & water) to increase the weight.  We use as little salt as possible to cure the meat which in turn gives you, the customer, a meaty succulent joint to cook and enjoy. Incidentally, these are the gammons we use to create our Gold Award winning hams.
You can also purchase as a smoked joint either in Oak or our very new Cherry smoke.

 

Cooking tip: Can be boiled or roasted, either method we recommend rinsing first then allow 20 minutes per lb + 20 minutes.
